MAKES 1 PIE Non-vegans can substitute ground beef or turkey.
Preheat oven to 400 degrees. Boil and mash plantains until tender. Fry ground veggie crumbles (or ground meat) lightly in margarine. Add salt, red onions, red pepper, dried cranberries, olives and tomato sauce. Cook for five minutes. Grease a 9-inch glass baking dish, put half the mashed plantains, add the veggie mixture and cover with remaining half of mashed plantains. Bake for 30 minutes.
