Spicy Mayo
Combine your favorite mayonnaise with sriracha until it’s as hot as you want it. Stir in chopped chives.
What it’s good on: Homemade banh mi sandwiches, sliced chicken, roast beef.
Salsa Rosada, Pink Sauce, Fancy Sauce
Combine mayo and ketchup. Add a squeeze of lime juice and/or Tabasco if you want.
What it’s good on: Popular in South America, pink sauce goes on any sandwich and serves as a seafood dip, too. Add chopped sweet pickle relish and you have a quick Thousand Island dressing.
Avocado Butter
Creamy avocado is a delicious, creamy replacement for butter or mayo – just combine ripe chunks in a blender or food processor and puree until smooth. Then add other flavorings at will. Plan on eating within a day or so.
What it’s good on: Add minced chives or scallions, capers, salt, freshly ground pepper and a squeeze of lemon juice for a piquant sandwich spread with sliced turkey or chicken. Mix in cilantro, jalapeño, green onion and tomato chunks and serve with pork slices. Blend with cream cheese and herbs for a bagel topping. Puree with basil, garlic and pine nuts to make pesto spread. Mix your favorite combination with egg salad.
