At 4am, Franjoy “Joy” McMillan is on the job at El Bagel at 6910 Biscayne Blvd., turning on the coffee maker, the oven and the hood, checking trays of bagels and getting the bakery ready for the day. The Miami-born McMillan, 28, is used to the life of a baker, having logged hours at Zak the Baker in Wynwood and a bakery in Auckland, New Zealand. In her free time, she’s also an enamel designer. Her business, Whisky & Sunflowers, features pins dedicated to bakers and what they make: baguettes, a bagel with cream cheese, croissants, sourdough and a Black Bakers Matter pin. “People love them,” she says, “It’s something to remind me of all the things I like.”
