Coral Gables’ waterfront Red Fish Grill at Matheson Hammock Park, closed since Hurricane Irma, will reopen this fall as Red Fish by Chef Adrianne, showcasing fresh seafood from local and U.S. waters.

After millions in much-needed county improvements at the park, the historic coral rock restaurant, closed since Hurricane Irma, was an opportunity for chef Adrianne Calvo to create a destination dining spot off Old Cutler Road near Fairchild Tropical Botanic Garden amid sprawling residences.

“We’re taking a New American approach to seafood,” says Calvo, who wants diners to be entertained and fascinated by trout from Aspen, east and west coast oysters and classic bouillabaisse. The space will feature outside dining, private cabanas and a rooftop bar serving craft cocktails.

Calvo has been busy lately, moving her Cracked by Chef Adrianne into the former No Name Chinese in South Miami and expanding the menu to include brunch. Her namesake restaurant, Chef Adrianne’s Vineyard Restaurant and Wine Bar, opened in suburban West Kendall, considered a dining wasteland at the time. Twelve years later, it’s a dining destination, just as she hopes Red Fish Grill will be.
