Avocado Chicken Salad with Wasabi Mayo

This is a good use for leftover rotisserie chicken. Find Japanese wasabi mayonnaise in Asian markets, or substitute regular mayo with prepared horseradish to taste.

Ingredients

  • 2 cups cooked chicken, cut into large dice
  • 3 scallions, sliced ¼-inch thick, green and white parts
  • 1 large ripe Florida avocado, flesh cut into ½-inch cubes
  • ¼ cup wasabi mayonnaise
  • Lettuce leaves for serving
  • Black sesame seeds

Instructions

Gently combine all ingredients and mix well. Serve atop lettuce leaves and top with black sesame seeds.
