Ingredients
- 4 large carrots, scrubbed and peeled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- ¼ teaspoon salt
- ¼ cup parsley, chopped
Instructions
Shred the carrots on a box grater using the side with the big holes. Be careful! Place in a bowl with the olive oil, lemon juice, salt and parsley and mix well.
