Ingredients
- 4 tablespoons extra-virgin olive oil
- ½ cup fresh basil leaves, washed and dried and torn into pieces
- ¼ cup fresh mint leaves, washed and dried and minced
- 1 pint cherry tomatoes, cut in half
- 1 clove garlic, smashed
- Salt and freshly ground pepper
About this recipe
Serves 4 Multicolored cherry tomatoes are especially lovely for this dish. We used these sweet golden cherry tomatoes from Teena's Pride. If you use small homegrown tomatoes, cut them into quarters.
Instructions
Heat olive oil over medium heat. Add herbs, tomatoes and garlic. Heat, stirring, for 3-4 minutes until tomatoes are heated through. Discard garlic. Season with salt and pepper.
