Ingredients
- 1½ lbs. ripe avocado, cut in slices
- ½ medium red onion, sliced thin and soaked in ice water for 15 minutes
- 1 bunch radishes, trimmed, sliced ⅛-in thick
- ½ cup flat-leaf parsley, chopped
Vinaigrette
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- ½ teaspoon sea salt
- Freshly ground black pepper

Serves 4 Soaking the onion first tames their raw bite.
Instructions
For vinaigrette, whisk together all ingredients. To assemble salad, arrange avocado slices on plate. Top with onion and radish slices. Sprinkle with parsley. Pour dressing over and serve.
