Ingredients
- 2 tablespoons sesame oil
- Juice from two limes
- 2 tablespoons rice vinegar
- 2 teaspoons sugar
- ½ teaspoon sea salt
- 1 2-inch knob fresh ginger, peeled and grated, with juice
- 4-5 medium carrots, shredded, about 2 cups
- 2 scallions, cut in thin rounds
- 4 tablespoons toasted sesame seeds

Instructions
Whisk together sesame oil, lime juice, rice vinegar, sugar, salt and ginger. Combine with carrots, scallions and sesame seeds and mix well.
