Spicy Cold Noodles 
with Peanut Sauce

Ingredients

  • ½ lb. fresh Chinese noodles
  • 3 scallions, root ends trimmed, sliced
  • 1 cucumber, sliced in thin disks
  • 1 red pepper, seeded and sliced in thin rings
  • 1 cup Thai basil leaves
Peanut Butter Dressing
  • ¼ cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons sriracha, or to taste
  • 1 tablespoon brown sugar
  • 1 tablespoon sesame oil

About this recipe

Serves 4  Adjust the sriracha depending on how much heat you prefer.

Instructions

Cook noodles according to package directions. Drain and place in a large bowl of ice water.

Meanwhile, make dressing: Combine all ingredients and whisk together till combined in large bowl.
To assemble salad: Drain noodles and add to bowl. Add scallions, cucumber, red pepper and basil leaves. Combine well and serve.
