Ingredients
- ½ lb. fresh Chinese noodles
- 3 scallions, root ends trimmed, sliced
- 1 cucumber, sliced in thin disks
- 1 red pepper, seeded and sliced in thin rings
- 1 cup Thai basil leaves
Peanut Butter Dressing
- ¼ cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 2 tablespoons sriracha, or to taste
- 1 tablespoon brown sugar
- 1 tablespoon sesame oil
About this recipe
Serves 4 Adjust the sriracha depending on how much heat you prefer.
Instructions
Cook noodles according to package directions. Drain and place in a large bowl of ice water.
Meanwhile, make dressing: Combine all ingredients and whisk together till combined in large bowl.
To assemble salad: Drain noodles and add to bowl. Add scallions, cucumber, red pepper and basil leaves. Combine well and serve.
